Vegetable Frittata

Every Saturday I aim to cook something different and today I decided given the warm Melbourne weather I will try something light and fresh, so here is my recipe to a Vegetable Frittata, it was really yummy!!


Ingredients

1 potato, cubed and cooked
1 cup pumpkin, cubed and cooked
½ cup corn kernels
1 green capsicum diced
1 cup mushrooms diced

1/2 cup bacon diced

2 spring onions diced
3 eggs
¾ cup reduced fat milk
2 tablespoons plain flour
½ cup reduced fat cheese
½ teaspoon salt

Method:

1) Placed all vegetables into a large bowl
2) Combine eggs, milk, flour, cheese & salt. Stir into vegetables. Place mixture into a lightly greased dish (a lasagne dish)
3) Bake in a moderate oven (180°C) for 40 minutes


*Serve with a dollop of greek natural yoghurt.
